Recipe for Quick and Easy Pecan Crusted Dijon Salmon

This salmon with a Dijon and pecan crust would make a lovely Valentine's Day dinner.

(For Phase One Fridays I feature Phase One Recipes from the past that have been my personal favorites, and this Quick and Easy Pecan-Crusted Dijon Salmon is perfect for a nice dinner on Valentine's Day.)

I probably don't need to remind you about Valentine's Day, do I?  Those who are celebrating by going out to dinner have hopefully made reservations, but if you're looking for something a bit special to cook at home I would highly recommend this delicious Pecan-Crusted Dijon Salmon.  Not only is it absolutely delicious, but this recipe is so easy that you won't have to spend much time in the kitchen.  (If salmon isn't your thing, there are a lot more ideas for Valentine's Day dinner at home with the Valentine's Day Recipes, including some low sugar chocolate treats.)

Grilled Salmon Recipe with Maple Sriracha Lime Glaze

Grilled Salmon with a glaze of sugar-free maple syrup, Sriracha, and lime juice.  So easy and delicious!  (With the fish is Barely Blanched Broccoli and Cauliflower Salad with Red Bell Pepper, Radishes, Red Onion, and Cashews.)

It's definitely grilling weather in Utah, and I've been cooking on my grill quite a bit, which always makes me happy.  My latest grilling experiment was this Grilled Salmon with Maple-Sriracha-Lime Glaze, adapted from Salmon with Sriracha Sauce and Lime featured in Self Magazine.  I loved the recipe idea of maple syrup, lime juice, and Sriracha on salmon, but I wanted lots more of the glaze ingredients, and for me this kind of salmon dish was just begging to go on the grill.  Rather cheeky of me to adapt a recipe from a famous movie star (although you do know that these movie stars don't write their own books, don't you?)  But definitely my version was a huge success, and I'm thinking this same type of sweet and spicy glaze would taste great on chicken.

Recipe Mustard Dill Salmon

Salmon is also a great source for healthy omega-3 fats.

1 pound fresh salmon fillets or if you bought them frozen, thawed
1/4 cup mustard
2 tbsp lemon juice
Dill, fresh or dried

1. Cut the salmon into three pieces (if you bought it already cut, skip this step). Place the salmon in a baking dish. Spread mustard on top of each piece.
2. Squeeze lemon juice over the salmon and sprinkle with dill.
3. Bake at 325 degree F for 20 to 25 minutes.

Nutrition Information: 220 calories per serving; 2 g carbohydrate; 30 g protein; 10 g fat
