Sweet Potato Appetizer Bites with Feta and Green Onion Gluten Free Meatless

These Sweet Potato Appetizer Bites with Feta and Green Onion are a healthier nibble for holiday parties or the Superbowl!


I've been a little distracted by the new design for Slow Cooker from Scratch, and now it feels like I went to bed in November and when I woke up there were less than two weeks until Christmas!  And I do have a few new holiday recipe ideas I want to share before things get too crazy, starting with these Sweet Potato Appetizer Bites with Feta and Green Onions.  Yum!

I love this combination of flavors, and if I went to a holiday gathering or Superbowl party and found a table loaded with sweets and chips staring me in the face, I would be so excited to find a deliciously healthy option like this to eat instead.  The hardest part of making these might be finding the thin sweet potatoes, but you can make them into two-bite nibbles if needed!  (And I do try to focus on meatless main dishes for Meatless Monday, but I could make a meal out of these, so this is my Meatless Monday idea for the week.)

If you have a broken arm (or just want a smaller size) this is a delicious breakfast casserole!

It's now been two weeks since I slipped on my icy steps and landed flat on my back with a broken arm.   Before that I'd been doing well with my yearly return to Phase One of the South Beach Diet, but I confess the broken arm did trigger a few days of total comfort eating.  Then I got over it and decided I really DID want to get back on track.  I've been even more grateful than usual to have Jake to help with recipes I've been trying out for A Month of Daily Phase One Recipes, but there are also times I have to cook for myself if I want to stick to Phase One.

Baked White Fish with Onions Peppers Olives and Feta Low Carb Gluten Free

(For Phase One Fridays I feature Phase One Recipes from the past that have been my personal favorites.)  This recipe for Baked White Fish with Onions, Peppers, Olives, and Feta is one I came up with in the very earliest days of my blog, and it's a favorite quick dinner that I've been making it for years. You can make this with any type of mild white fish, but I probably use Tilapia the most, and using a topping with finely chopped red onion, red bell pepper, green olives, and Feta adds a lot of flavor to the mild-flavored Tilapia.  If you're not  a Tilapia fan, use any any mild white fish such as halibut, orange roughy, cod, or sole.  There's a small amount of mayo spread over the fish to keep the topping on, and that also keeps the fish moist when it's baked at a high temperature.  It's important to start with room-temperature fish pieces, so the fish cooks quickly without the topping ingredients getting too done.  If green olives are a non-starter at your house, try it with capers instead, but please try this way of cooking fish if you like these flavors and I bet it will become a repeater at your house too!

When I shared the recipe for Power Greens Salad with Blueberries and Almonds, I raved about how much I love the Power Greens mix of chard, kale, and Spinach I've been getting at Costco.  And if you know my food preferences at all, you might have guessed I'd be making some kind of breakfast casserole with this delicious mix of greens.  In the last couple of weeks I've made this Power Greens Breakfast Casserole with Feta and Mozzarella four times, so that's a sign of how much I like it!

Then last weekend my friend Sean from Punk Domestics stayed at my house when he was in town for the Alt Conference, and when I fed him some of the leftovers for breakfast, he gave the recipe a thumbs up.  I actually used a full pound of the greens mix in this, which helped balance out the generous amount of cheese!  I think the combination of cheeses here went really well with the variety of greens, so if you like the idea of starting out the day with a healthy dose of greens, give this a try!

Black Eyed Pea And Vegan Feta Salad On Romaine

My Annual Lucky Black-Eyed Pea Recipe
If you have been following my blog for over a year, you know that I always eat black-eyed peas on New Years day for good luck- a southern tradition I picked up while living in Texas many years ago. This year Im making a delicious salad with "vegan feta".

If you marinate firm or extra firm tofu in lemon, oil, salt, pepper and oregano, it has the taste and appearance of feta cheese. So for those of you who need to be dairy free or who are just trying to cut down on cholesterol, this is a wonderful substitution. To get some inflammation-busting omega-3 fatty acid in this recipe, I use some hemp oil in the marinade. Its dark green and nutty flavor compliments the extra virgin olive oil.

Besides being a good source of omega-3, this recipe is high in protein and dietary fiber.

Tofu marinated in lemon, oil, and seasonings tastes like feta!

Black-Eyed Pea and Vegan Feta Salad
"Mostly Raw" Vegan, Gluten Free
[makes 4 servings]

For the dressing/marinade
2 tablespoons extra virgin olive oil
2 tablespoons cold pressed hemp oil
2 tablespoons freshly squeezed lemon juice
3/4 teaspoon dried oregano
1/8 teaspoon black pepper
3/4 teaspoon salt
For the salad
1/2 block firm or extra firm tofu, diced
1/2 green bell pepper, diced or sliced
1/2 red bell pepper, diced or sliced
1/2 cup red onion, diced
12 pitted kalamata olives, cut in half
1 1/2 cups no salt added canned black-eyed peas, rinsed
2 small heads Romaine lettuce, sliced

Prepare the vegan feta. Mix the salad dressing ingredients in a large bowl until the salt is dissolved.
Add the tofu and toss gently until well coated. Set aside for 10 minutes, tossing occasionally, while you prepare the rest of the salad.

Make the salad. Add the rest of the salad ingredients, except the Romaine lettuce, to the bowl of marinated tofu. Toss gently until well coated. 

Divide the Romaine into four large bowls and place one quarter of the salad mixture over each bowl of lettuce. If you would rather mix the lettuce in the large bowl with the tofu before serving, you can do that too.
Serve immediately.

Per serving: 289 calories, 18 g total fat, 2 g saturated fat, 0 mg cholesterol, 1.3 g omega-3 and 6 g omega-6 fatty acids, 12 g protein, 23 g carbohydrates, 6 g dietary fiber and 600 mg of sodium.
